MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: CURRIED COUSCOUS SALAD
 Categories: Salads, Low-fat, Casserole
      Yield: 4 servings
 
    2/3 c  Chicken broth or water
      2 ts Curry powder
           Pinch cayenne pepper
      1 c  Quick-cooking couscous
    1/4 c  Dried currants
      2    Green onions; thin sliced
    1/2 c  Tiny peas
    1/2 c  Roasted red pepper; =or=-
    1/4 c  Fresh cilantro; minced
      3 ts Fresh lemon juice; or less,
           Salt to taste
 
  Heat the chicken broth and seasonings to a boil. Put the couscous and
  currants in a medium bowl and pour hot broth over. Cover tightly and
  let stand 10 minutes. Fluff with a fork. Fold in remaining
  ingredients. Serve chilled.
